MAKES: 1
1 (14.5 oz can) light coconut milk
1/4 cup whole milk
1 large banana, sliced and frozen
1/4 teaspoon vanilla extract
2 tablespoons shredded unsweetened coconut
1 teaspoon honey
Fresh blueberries, blackberries, and raspberries
First, make the coconut milk ice cubes by filling an ice cube tray with light coconut milk (you will use 4 cubes per smoothie bowl). Freeze several hours or overnight.
Add 4 coconut milk ice cubes, milk, frozen banana slices, vanilla extract, shredded coconut, and honey to a high-powered blender.* Blend until smooth. Pour into a bowl and add fruit to top.
